Yogurt Tartlets

These tartlets are perfect for snacks, preferably accompanied by tea or hot chocolate.
If you want, you can vary the flavors by replacing vanilla with lemon or orange zest.
You can also make them with coffee by adding instant coffee to the hot cream.

Ingredients

• 400 g (0.88 lbs or approximately 1 2/3 cups) of Greek yogurt
• 3 eggs
• 200 ml (7 fl oz) of fresh whipping cream
• ½ vanilla pod
• 60 g (2.1 oz or approximately 1/4 cup) of butter
• ½ liter (17.6 fl oz) of whole milk
• 80 g of all-purpose flour (type 55 without baking powder)
• Powdered sugar for dusting
• Aluminum tartlet molds greased with butter

Instructions

   Cut the vanilla pod in half.
   With the tip of a knife, scrape the vanilla and remove the seeds.

   Place the seeds and vanilla pod in a small saucepan.
   Also, add the cream and butter.
   Heat gently over low heat, stirring occasionally.
   Remove from heat before it starts to boil and let it rest for at least 15 minutes.

   Crack the eggs into a bowl.
   Add the sugar and beat well until you get a whitish cream.
   While beating, add the yogurt, sifted flour, and the vanilla and cream mixture passed through a fine sieve.
   Beat well until you get a homogeneous cream.

   Pour the cream into a jug to make it easier to serve.
   Fill the aluminum molds with the cream up to 2/3, without overfilling.

   Preheat the oven to 180°C (356°F) and bake for approximately 25 minutes.
   When the tartlets are golden, remove them from the oven and unmold.
   If you want, place the tartlets in paper molds and dust with powdered sugar.
