Stewed Duck

This duck recipe is perfect for colder days, as it's a very comforting meal.
Often we associate duck with duck rice, but there are many alternatives, and this one is quite easy and economical.
The perfect accompaniment for this meal is mashed potatoes and cooked vegetables.

Ingredients:

• 1 duck cut into pieces
• 4 tablespoons of olive oil
• 1 chopped onion
• 4 chopped garlic cloves
• 2 bay leaves
• 150 g (about 5.3 oz) of bacon cut into cubes
• 400 g (about 14.1 oz) of peeled tomatoes cut into pieces
• 1 sprig of parsley tied with a thread
• 500 ml (about 2.1 cups) of white wine
• Chopped parsley
• Salt
• Black pepper

Instructions:

1. Season the duck with salt and pepper.
   Mix the seasoning well with the meat.
2. In a large pan, heat up the olive oil.
   Add the meat and let it fry evenly until it takes on color.
   Once the duck is golden brown, remove it to a dish.
3. To the fat, add the bacon, bay leaves, onion, and garlic.
   Stir and let it brown.
4. Add the tomatoes to the sauté.
   Stir and let it sauté a little more.
5. After everything is well sautéed, add the sprig of parsley and the pieces of duck.
   Mix well and pour over the white wine.
   Cover and let it cook over moderate heat for about 1.5 hours.
   Stir occasionally to prevent it from sticking to the bottom and if necessary, add a little water.
6. Once the meat is tender, remove it from the heat.
   Finally, sprinkle the meat with chopped parsley.
