Octopus Feijoada

Octopus is popular all year round, but it is especially present on the tables of many Portuguese people during Christmas.
Octopus feijoada is very flavorful and comforting for cold days.
You can also make this recipe with frozen octopus.

Ingredients:

• 1 octopus, about 1.5 kg
• 80 ml (2.8 fl oz) of olive oil
• 1 large onion, chopped
• 5 garlic cloves, chopped
• 2 bay leaves
• 3 chopped chilli peppers
• ½ small bell pepper, diced
• 1 piece of bacon rind
• 80 g (2.82 oz) of meat chorizo, diced
• 80 g of meat chorizo, diced
• 2 large carrots, diced
• 2 large ripe tomatoes, diced
• 3 tablespoons of tomato paste
• 250 ml (8.8 fl oz) of white wine
• 900 g (1.98 lbs) of cooked white beans
• 300 ml (10.6 fl oz) of natural fish, vegetable, or seafood broth, or water
• Salt
• Fresh coriander, chopped

Instructions:

1. In a pot or wide saucepan, place the octopus.
   Cover and cook over low heat for 40 minutes.
   There is no need to add water or seasonings.
2. After 20 minutes, turn the octopus and let it cook for the remaining time.
3. Once the octopus is cooked, after 40 minutes, remove it from the pot.
4. In a wide saucepan, heat the olive oil, onion, garlic, chilli peppers, bell pepper, bay leaves, bacon rind, bacon, and chorizo.
   Sauté well until it starts to brown.
5. Add the diced carrots and tomatoes to the sauté.
   Stir and let it cook well.
6. Meanwhile, drain the octopus and cut it into pieces on a cutting board.
7. Mix the remaining octopus cooking liquid with the broth or water and white wine.
   Stir well with a whisk to make use of all the octopus broth.
8. When the sauté is well cooked, add the beans, tomato paste, and the mixture of broths.
   Season with a few pinches of salt (not too much).
   Cover and cook over high heat for 10 minutes.
9. When the feijoada is well cooked, add the octopus.
   Stir and bring to a boil.
10. As soon as it starts boiling, mix in the coriander, turn off the heat, and cover.
    Let it rest for a few minutes before serving.
