Meatloaf Stuffed with 'Farinheira' Sausage and Olives

This meatloaf is very tasty due to its filling.
If you want, you can use mixed ground beef and pork, the kind that is usually sold already ground.
You can also replace the 'farinheira' sausage with 'alheira' sausage.

Ingredients:

• 800 g (28.2 oz) of ground beef
• 1 large 'farinheira' sausage
• 200 g (7 oz) of bacon, cut into pieces
• 1 medium onion, cut into pieces
• 3 bay leaves
• 4 cloves of garlic
• 120 g (4.2 oz) of pitted black olives
• 1 egg
• Olive oil for brushing
• 120 ml (4 fl oz) of white wine
• Dried oregano leaves
• 50 g (1.8 oz) of butter
• Bread crumbs
• Black pepper
• Salt

Instructions:

1. In a grinder or a food processor, put the onion, garlic, and bacon.
   Grind everything until it becomes a paste.
   Add this mixture to the meat.
2. Season with a few pinches of salt, taking into account that the bacon and 'farinheira' sausage are already salty.
   Season with pepper, add the egg and about a tablespoon of dried oregano leaves.
   Mix everything very well.
3. Chop the olives.
   Add 2 heaping tablespoons of bread crumbs and the chopped olives to the meat.
   Mix everything very well.
4. On a sheet of aluminum foil, sprinkle some bread crumbs and then spread the meat into a rectangle.
   Finally, pass a rolling pin over the meat to smooth it out.
5. Cut the ends of the 'farinheira' sausage and prick it with a toothpick.
   Stretch the sausage and place it on one of the ends of the meat.
   Roll the meat up, pressing so that the roll is compact.
   Close the ends of the roll and leave the joint facing down.
6. In a baking tray, put a little olive oil and brush it.
   Place the roll on the tray.
   Around the roll, place the butter cut into pieces, the bay leaves, and the white wine.
7. Bake in a preheated oven at 190°C (374°F) for approximately 45 minutes.
   After the roll is baked, remove it from the oven, cut it into slices and serve.
   If you like, accompany this dish with carrot rice and cooked broccoli.
