Chicken in a Pot

This traditional dish from Alcobaça, Portugal, is very tasty and quite economical.
It's a perfect meal for weekend lunches.
If you don't have a clay pot, you can use a baking tray and cover it with aluminum foil.
Serve this dish with french fries.

Ingredients:

• 1 large chicken, cut into pieces
• 2 cloves of garlic, minced
• 2 bay leaves
• 100 g (3.5 oz) of diced ham
• 10 small onions
• 2 carrots, cut into half-moon slices
• 4 ripe tomatoes, peeled and seeded, cut into cubes
• 2 tablespoons of mustard
• 2 heaped tablespoons of butter
• 125 ml (1/2 cup) of white wine
• 80 ml (1/3 cup) of aged brandy
• 80 ml (1/3 cup) of port wine
• Chopped parsley
• 1 flat teaspoon of paprika
• Chili pepper to taste
• Salt

Instructions:

1. Season the chicken with salt, garlic, paprika, and chili pepper.
   Add the bay leaves and mix well.
   Let it marinate for 20 minutes.
2. In a clay pot, add the butter and let it melt.
   Add the chicken pieces and let them brown evenly.
3. When the meat is golden, add the ham, mustard, and tomato.
   Mix everything very well and add the carrots, small onions, white wine, port wine, brandy, and chopped parsley.
   Stir everything very well, cover, and put it in a preheated oven at 200°C (392°F).
   Let it cook for approximately 40 minutes.
4. After 40 minutes, stir the chicken again.
   Put it back in the oven, without the lid, so that it can brown on top.
   Let it cook for another 30 to 40 minutes.
5. When everything is golden, take it out of the oven and serve.
