Bread Crumb Cake

This cake is perfect for using leftover bread, in this case, just grind it until it is finely grated.
You can play with the aromas in this recipe, use citrus zest to taste, the other flavors used in the recipe are optional.
You can make the recipe in muffin tins, in this case, keep in mind that they cook in half the time.

Ingredients

• 5 large eggs
• 180 g (0.4 lb or 6.35 oz) of sugar
• 50 g (1.76 oz) of slightly softened butter
• 180 g (0.4 lb or 6.35 oz) of bread crumbs
• 1 heaping teaspoon of baking powder
• Zest of 1 lemon
• 1 teaspoon of vanilla essence
• 1 teaspoon of cinnamon powder
• Powdered sugar to sprinkle
• 1 20 cm (7.87 inches) diameter cake tin, greased with butter and sprinkled with bread crumbs

   In a bowl, place the butter and sugar.
   Beat until it becomes a cream.

   While beating, break the eggs and separate the yolks from the whites.
   Add the yolks one by one to the cream.
   Also add the vanilla essence and cinnamon powder to the cream.
   Beat very well until it bubbles.

   With a spoon, mix a lemon zest into the cream.

   Beat the egg whites into firm peaks.

   Gradually and alternately, fold the bread crumbs, baking powder, and beaten egg whites into the cream.
   Finally, place the dough inside the mold.

   Put it in a preheated oven at 180 °C (356 °F) and let it cook for about 30 minutes.
   After the time and when the cake is cooked, remove it and unmold it.

   Finally, sprinkle the cake with powdered sugar.
